Kiddo Approved Homemade Chewy Granola Bars

When I tell you these chewy granola bars are delicious and addicting, I mean they are delicious and addicting!! They are chewy, a little salty, a little sweet – everything you look for in a granola bar. PLUS they are low in refined sugar and have zero funky ingredients, which means you feel good about giving them to your kiddos!

My girls have been asking for them for breakfast, I serve them along side their antioxidant-packed smoothie and they are happy girls!

How to make these delicious chewy granola bars:

Add 1/4 cup packed brown sugar, 1/3 cup honey, and 4 tablespoons coconut oil to a small pan and bring to a simmer on the stove. Simmer for 1-2 minutes then remove from heat and add 1/2 teaspoon vanilla extract.

Be careful when adding the vanilla into the hot simmering sugars, it will bubble a little!

When the pot of sugars is simmering, put 2 cups of old fashioned oats, 2 cups of Rice Krispies cereal, and 1/2 teaspoon of salt into a medium mixing bowl.

Add the warm mixture from the pan into the granola/cereal mixture, stir until all of the oats are coated with the sticky mixture.

Once all of the oats are coated and sticky, pour into a parchment paper lined 13×9 baking dish.

Using a piece of parchment paper, so your fingers don’t stick to the mixture, press the mixture firmly and evenly into the pan. Pack it tight, so when you go to cut them, it all stays together!
If you want to drizzle the top with chocolate, melt together chocolate chips and a small amount of coconut oil in the microwave. Use a spoon to drizzle chocolate ribbons on top. Add sprinkles next (if you want them).

Place in the freezer, allowing the granola to cool. After 20 minutes (or about an hour in the fridge) remove from the freezer and remove the granola block from the pan. Use a large knife to cut into even strips! Store in an air tight container at room temperature for up to a week!

Add ins:

You can use any adds in’s you’d like! Mini Chocolate chips, sprinkles, cranberries with white chocolate chips, raisins – the world is your oyster!! Add them in once the sticky mixture (oats + sugar) is cooled before adding to the pan! 1/4 cup is what you’ll need!
