There is nothing better than biting into a delicious cold ice cream sandwich on a hot summer day with friends. As a kid, a chocolate chip ice cream sammy was ALWAYS my go to when getting a little treaty at the lake or gas station. But the store bought sammies have nothing on these delicious homemade ones! These are such an easy summer time dessert and are 100% delightful.
The key players in this recipe are the homemade chocolate chip cookies (Joanna Gains Recipe) and Tillamook Old fashioned vanilla ice cream. If you haven’t had the pleasure of trying Tillamook ice cream yet – you are in for a surprise! It is literally the most creamy and delicious store-bought ice cream!
You’ll start by making the cookie dough according to this recipe from Joanna Gain’s Magnolia Table recipe book. When it is time to make the dough balls to bake, I used this cookie dough scoop , scooped out the dough, then before placing them onto the cookie sheet, I halved the balls. This makes the perfect size cookie for these sammies! (especially for kiddos!)
Once I baked the cookies according to JoJo’s recipe (a little under done, of course! No one likes a crunchy, over baked cookie!!) While they were still warm, I used a piece of parchment paper and a flat bottom cup/jar to smoosh the cookies into a flat cookie – overall better ergonomics for eating the sammy, IYKYK.
Once the cookies are smooshed and cooled – even after putting them in the fridge for a bit, line them all up on the cookie sheet and start scooping ice cream (I used the same scooper as the dough!) Hot tips for this step: work quickly and make sure your ice cream is superrrr frozen cold. If it melts too quickly, it gets super messy and the cookies will slide right off the ice cream!
Place the cookie hat on top of the ice cream and get them in the freezer ASAP!
